Perhaps the most taut of these wines in its youth, 100% Chardonnay vinified in oak barrel and about 6 years sur lie. Finished with zero dosage, there is great depth upon unfurling, round, saline with citrus & orchard fruit. One for the cellar!

A native daughter of the Les Riceys, lured home by the temptations of her home village and the desire to create her own version, Elise Dechannes has done just that - her wines are vinous, precise and vibrant, with the tension and potential of top Chablis.If only she made more!

Elise Dechannes

Born in Les Riceys, Elise was surrounded by wine in her younger years, only to head into the finance world. Though she was proficient in her career, the tug of wine was too great eventually, and she returned home to start a tiny domaine in 2008.

Through her years of tasting wines, Elise found that she connected with wines made in a more thoughtful style that was respectful of nature - more natural, more organic. She has operated her vineyards and estate with the same principles, farming in organic and biodynamic methods while being respectful of her plots of earth, her wines and her staff. 

Les Riceys is known for its juicy rosé wines, and Elise does produce such a style; however, it is in her sparkling Champagnes that we find the most intrigue and complexity. In short, they are bold and tightly-wrapped at first, then unwind into deep, dark-fruited wines with wildly complex aromatics, reminiscent of wines from the neighboring Burgundy region. 

Consider the proximity to Burgundy when preparing to drink these wines - these are not Mesnil-esque. Please note these are all Brut Nature - zero dosage - meaning they are ripe in flavor and very dry. Full of personality and worthy of Burgundy glasses, the wines unfold over hours in the glass. Also very deserving of several years of cellaring, or a quick decant upon opening when in their youth!
