What you're looking for are wines that have depth and a hint of a savory character - this is something as subtle as the whiff of smoke in a Beaujolais (thank you, pink granite!), a similar tone in Pinot Meunier-based Champagnes, or the natural spice-laden tones of Nebbiolo - albeit a softer style like Busso or Canonica. If you're into whites, a bit more body and age can really add complexity; honestly, Riesling with a subtle dollop of residual sugar is sneaky good, too! Aside from that, look for complex blended wines like you find in the Rhone, Roussillon or Bordeaux. As a rule of thumb, when in doubt, go with Rosé!
