From a 1970 planting of Chenin on 1.24 hectares, the soils here comprised of shale and sandstone atop coal. Harvested in several tries, the botrytized grapes are then gently pressed and allowed to settle before fermenting in used Burgundy barrels with their native yeasts. Racked to tank and aged several months before bottling with minimal sulfur.
