2022 Domaine Sylvain Pataille, Bourgogne, Pinot Beurot
Pinot Beurot is a white wine made from the Pinot Gris grape. The name "Beurot" is derived from the Burgundian term for Pinot Gris, referencing the grape's brownish skin color, which resembles the heavy brown fabric worn by French monks in the Middle Ages. Planted in 1929 and 1930, the vines are located in 'En Blungey' in Couchey. The grapes are crushed and pressed in a vertical press, undergo ambient yeast fermentation, and are aged for 12 months in used barrels. The wine is then racked and aged for an additional 3 to 6 months in tank, with minimal SO2 added at bottling. Pinot Beurot has a deep golden color, with aromas of white fruits and spices.
