From a single plot within Mesnil-sur-Oger that formerly belonged to Elise's grandmother, the low-yielding vines sit at the very bottom of the village. Fermented and aged 15 months in 600L demi-muids, then aged sur lee in bottle for 2 years under cork prior to disgorgement. Finished without dosage, then aged an additional 6 months in bottle before release.

Somewhat new to the scene of Champagne, Elise Bougy has sculpted her family's vineyards in highly-prized parcels into fantastic wines full of personality and verve. From plots in Mesnil-Sur-Oger and Mesneux (Montagne de Reims) come a tiny range of wines crafted without the addition of sulfur, allowing them to be open and giving upon release, while still having the necessary structure to age seamlessly.

Elise Bougy's winemaking studies in Dijon exposed her to a wide range of technique and methodologies, which she kept in the bac of her head as she moved into the commerce side of the industry after her schooling; in 2016, however, she was pulled back to her family estate to take over, and she set about to produce wines that suited her naturally charismatic and curious personality.

Blessed with two splendid parcels in Les Chetillons within Mesnil-Sur-Oger and Mesneux within the Montagne de Reims, the first release was merely two wines. She had been working the vineyards entirely organically, and got the fruit healthy enough that she crafted the entire production, as she has since, without the addition of sulfur. Since 2021, the vineyard is certified biodynamic.

In the time since taking over her family's land, Elise has broadened her range to include the Hors-Norme Vibration series, selecting the very best grapes of her parcels and aging them sur lie for 4 years, and another 6 months after disgorgement before release, when she deems them to be ready to be at prime drinkability.
